- Iron
- B vitamins
- Magnesium
- Potassium
- Fiber
But they make you bloated or gassy? Try these tips for cooking dried beans:
- Use a pressure cooker
- Add sea salt after cooking
- Add a piece of dried kombu to the pot before cooking
- Cook with cumin, garlic or fennel
- Add a splash of apple cider vinegar to the cooking water
Also, smaller beans are easier to digest (Hello, lentils).
